Fish Tacos

Makes: 4 servings

Ingredients

  • 1 red onion, chopped
  • ½ cup cilantro, chopped
  • 1 cup green cabbage, sliced and chopped
  • 4 tilapia fillets (4 ounces each) (or any white fish)
  • 1 teaspoon chili powder (more or less to taste)
  • 8 small tortillas
  • 1 avocado

Directions

  1. Adjust your top oven rack to be about 6 inches from the broiler. Then, preheat the broiler to high.
  2. Mix the red onion, cilantro, and cabbage in a bowl and set aside.
  3. Slice the avocado and set aside.
  4. Lightly sprinkle fish fillets with chili powder and place on a baking pan.
  5. Place in the oven and broil for approximately 3-4 minutes, or until fish is fully cooked. You will know the fish is done when it "flakes" or pulls apart easily when separated with a fork.
  6. Heat tortillas on a griddle or skillet over medium-high heat or in the microwave oven for just a few seconds until softened and hot.
  7. Fill tortilla with fish, onion, cilantro, and cabbage. Add a slice or two of avocado on top of the cabbage mixture. If desired, serve with plain Greek yogurt as a topping along with salsa and lime slices.
