Hearty Summer Squash and Meat Casserole

Full of delicious summer vegetables combined with ground meat and potatoes, this is a hearty main dish. Try using fresh tomatoes and Italian herbs if you also grow them in your garden.

Makes: 6 servings

Ingredients

  • 1 pound ground meat (beef, pork, turkey)
  • 1 small onion, diced
  • 3 small zucchini, sliced
  • 3 small yellow squash, sliced
  • 3 medium potatoes, diced
  • 1 pound tomatoes, diced (or 14.5 oz low-sodium canned tomatoes)
  • ½ teaspoon salt
  • 1 tablespoon fresh herbs (basil, oregano, rosemary, or thyme; or 1 teaspoon dried)

Directions

  1. Preheat oven to 350°F.
  2. Brown meat and onion together in a skillet; drain.
  3. Mix all ingredients together and place in a casserole dish.
  4. Cover with foil and bake for 45 minutes.
